Sam Wieland from Black Rabbit Distillery makes gin. Not any ordinary gin, but gin made from Goulburn Valley plums.
Sam takes 'ugly plums' not suitable for sale and ferments them into plum wine. He distils this plum wine into plum spirit in a column still hand-built from copper and stainless steel. Into this spirit, he soaks botanicals such as juniper, star anise and other spices like cardamom and coriander. This aromatic mix is distilled again in a little pot still made from a beer keg. Some of the gin is macerated with passionfruit and some with blackberries, while the rest is bottled as a London dry gin.
Sample the smooth and velvety result at his tasting room in Kialla, which resourcefully also doubles as Sam’s phone repair business.
