Meats and Moore

Brent Moore at Meats and Moore is passionate about his smallgoods. His face lights up when he talks about how he slowly brines his hams in his own mix of salt, sugar and spices, then carefully hot smokes them over a blend of native hardwood from the sawmill at Rushworth. 

He's a local lad who learned his trade in the best butcheries in the big smoke before he returned home to raise a family. For a young bloke, he's old-fashioned when it comes to meat. He buys whole beef carcasses from a local farmer on the outskirts of Tatura who raises his cattle free-range on pasture. 

Brent makes award-winning products with his own mix of salt, sugar and spices, then smokes the meats over native hardwoods.
